Blueberries happens to be one of the favorites fruits of my little grandson. Blueberries, together with strawberries, pomegrantates and broccoli are loaded with antioxidants.

As we get older our skin begins to show damage, caused by free radicals. Foods high in anti-oxidants can help neutralized the damage. Blueberry muffins are one way to both enjoy the muffins and benefit our skin.

I have used both fresh blueberries and frozen blueberries. When I use the frozen blueberries, the batter tends to turn a purple color. When the berries are fresh, they do not exude their juices at the point of the batter being mixed.

During the baking process you may hear the berries burst in the mixture. Here is the recipe.


INGREDIENTS

  1. 1½cups all purpose flour
  2. ½canola oil
  3. ½ cup water
  4. 1/3 cup brown sugar
  5. 2 tsps. baking powder
  6. ¼ tsp. salt
  7. 1 cup frozen blueberries, thawed
  8. 1 tsp. ground flax seed

METHOD

  1. Sift baking powder and flour. Add ground flax seeds & salt
  2. Pulse sugar and oil in food processor. When well mixed, remove and place in bowl
  3. Blend flour and sugar mixture. Add water and blend
  4. Add water to thin mixture. Folow with blueberries. Blend all ingredients
  5. you may use fresh blueberries
  6. Heat oven to 400°
  7. rub some oil in a small muffin pan. Add mixture. This amount will yield 10 muffins
  8. Bake for 12 minutes. Test with a knife to ensure it is cooked
  9. When done, remove from oven and leave to cool
  10. You may top it with cream, eat as is or butter it to enoy with tea. The blueberries give the muffins a light purple color
