Delicious Plate of Date Rolls

Another delicious and firm favorite of mine, date rolls is a popular dessert, especially during festive times. It can be made ahead of time and stored for several weeks, in an air tight container.

Select dates that are fresh and soft.

This recipe yields about 16 date rolls. You can easily double the ingredients to make more.

Here is the recipe for Date Rolls.

INGREDIENTS

  1. 1 cup flour
  2. 3 tblsps.baker's sugar/castor sugar
  3. 4 tablespoons maizena/cornstarch
  4. a pinch of salt
  5. 3/4 of 1 stick/3 oz. cold butter
  6. ½ tsp. vanilla essence, (optional)
  7. ¼cup iced water
  8. About 16 dates
  9. a pinch of salt
  10. Fine dessicated coconut powder

METHOD

  1. Sift first 4 ingredients
  2. Rub butter into flour. Add water, a little at a time to make a soft dough. You may not need all of it
  3. Divide dough into 16 evenly sized balls
  4. Take a ball and flatten into an oval shape. Add date, then gently enclose with the flattened dough to completely enclose date and form an oval shape
  5. Spread dessicated coconut on a plate and roll the shapes into the coconut
  6. Prepare baking tray, by applying lightly with butter or oil
  7. Ensure spacing between shaped dough, to allow for expansion
  8. Bake at 160°C./325°F. for 25-30 minutes
  9. The Rolls should be light in color, with toasted dessicated coconut
  10. Remove from oven
  11. When cool, enjoy date rolls
