I have always loved fruit cake and often ate the regular fruit cake baked with egg. So I was really delighted when my good friend Amra Chakravathy shared her recipe for Egg-less Fruit Cake with me. I have tried it several times and it always bakes very well. The only problem is that I find it hard to stop eating it.

Amra and I met in 1967 when we were social work students in Durban, South Africa. Amra has held very responsible, managerial positions in her social work career. She is a wonderful friend, very caring and with a personality that is perfect for the career that she practices. Although she has also faced many challenges she seeks solutions to cope better. She is a loving mother to 2 adult sons. Being vegetarian she is also very creative in her cooking skills, providing her family with wholesome meals.

Egg-less Fruit Cake

INGREDIENTS

  1. 375g. butter (1½ cups)
  2. 1 x 397g. condensed milk
  3. 400ml. water
  4. 750ml.(3 cups) flour
  5. 8ml.baking powder(about 1½ tsp.)
  6. 8ml.baking soda/bicarbonate of soda (about 1½ tsp.)
  7. 1 cup chopped pecan nuts
  8. 2 cups fruit cake mix
  9. ½ cup chopped glace cherries
  10. 5ml. vanilla essence
  11. A pinch of salt

METHOD

  1. Melt butter, condensed milk & water. Allow to cool
  2. Sift dry ingredients together & add with remaining ingredients, plus the melted mix
  3. Stir and blend well
  4. Turn mixture into a lined 10" diameter round cake tin
  5. Bake at 160° (325°F) for approx. 1½ hours.

When the cake has cooled you may choose to cover it with marzipan and decorate as desired. I prefer it with no decoration, just sliced with butter & accompanied with tea. For those with diet restrictions, please subsitute the ingredients listed here with those more suited to your particular health condition.

This cake may also be baked in the microwave oven in a large ring mould for 30min., on a medium/low setting. I have not tried this method
