RaspberrY Tiramisu

This dessert is similar to trifle, but is much quicker to make. It is a rich & very delicious dessert. I used slices of plain cake as the base. To access the recipe for plain cake, click on this link, Plain Cake.

This is a vegetarian dish. However if you do not mind eating cakes with eggs you may use any other cake like Pound Cake instead.

Here is the recipe for Raspberry Tiramisu


  1. slices of plain cake to line a 8"x11" container
  2. 10 oz. frozen raspberries
  3. ¾ cup sugar
  4. 1½ cup whipping cream/fresh cream
  5. 8 oz. mascarpone cheese ( an Italian cream cheese)
  6. 1 cup fresh raspberries or fruit of your choice
  7. 1¼ teaspoon vanilla essence
  8. a handful of flaked almonds


  1. Wash fresh raspberries under running water and place on paper towel to absorb water
  2. Puree frozen raspberries with sugar. Add essence
  3. Layer cake in container
  4. Lightly whip cream. Mix with mascarpone cheese
  5. Pour pureed raspberry mix over cake. Spread to cover. Allow to soak into cake for about 15 min.
  6. Layer with cream mix. Add fresh fruit on top, decorate flaked almonds
  7. Keep in refrigerator until ready to serve

You will notice that I use a lot of Pyrex dishes for my baking. What I really like about it is that, it is so versatile. You can use it from freezer to oven. The handy lid means that everything is stored and secure. It is great to transport food in as well.

We often use the smaller containers to carry lunch to work or school. It is also excellent for storing leftover foods. Unlike plastic containers, there is no smell, or stain. It is also microwave safe.They last for years. Just make sure you don't bake with the lid on.
