This recipe is suitable for Vegans as it is made without the use of dairy products. The ingredients are low in fats & calories, yet simply delicious.
In this recipe I have used raisins. You may use cranberries or any fruit that you prefer. Nuts are also a healthy addition. The recipe can be adjusted fairly freely. I find that even though the dough, (including plain scones) may sometimes be too wet & not suitable to make round shapes, don't despair. Just take a tablespoon at a time and lay it on the baking tray and you will get tasty scones, though somewhat misshapen.
Be sure to apply a thin coating of butter or oil to the bottom of the baking tray before you add scones to be baked.
Scones bake very quickly in about 10-12 minutes. When cool, serve plain, or with butter/cheese (the vegan type if you prefer that) & enjoy with tea.
October, 2012-I have added an additional ingredient. It is cornflour/maizena. One tablespoon to a cupful of flour helps to make really soft scones.
