wholewheat Scones

This recipe is suitable for Vegans as it is made without the use of dairy products. The ingredients are low in fats & calories, yet simply delicious.

In this recipe I have used raisins. You may use cranberries or any fruit that you prefer. Nuts are also a healthy addition. The recipe can be adjusted fairly freely. I find that even though the dough, (including plain scones) may sometimes be too wet & not suitable to make round shapes, don't despair. Just take a tablespoon at a time and lay it on the baking tray and you will get tasty scones, though somewhat misshapen.

Be sure to apply a thin coating of butter or oil to the bottom of the baking tray before you add scones to be baked.

Scones bake very quickly in about 10-12 minutes. When cool, serve plain, or with butter/cheese (the vegan type if you prefer that) & enjoy with tea.

October, 2012-I have added an additional ingredient. It is cornflour/maizena. One tablespoon to a cupful of flour helps to make really soft scones.

Here is the recipe for wholewheat scones


INGREDIENTS

  1. 2 cups wholewheat flour
  2. ½ tsp. bicarbonate of soda/baking soda
  3. 3 tsps/15 ml. baking powder.
  4. 1 tblsp. cornflour/maizena
  5. 2 tblsp. canola oil
  6. 2 tblsp. honey
  7. ¼ cup brown sugar
  8. ½-1 cup water
  9. 1 tblsp. ground flax seed
  10. 2 tblsp. finely chopped walnuts
  11. 2 tblsp. raisins
  12. ¼ teaspoon salt

METHOD

  1. Sift numbers 1-4. Add oil & mix
  2. Add sugar (adjust amount to your taste)
  3. Add rest of dry ingredients. Then add honey and half cup of water, mix to a smooth dough. Add more water if dough is too thick
  4. If it sticks to fingers, add small amounts of cornflour (Maizena) until the dough is smooth
  5. Use a cutter or form small balls, flatten tops gently. Bake in a hot oven, 450 degrees F. for about 10-12 minutes
  6. It should be a light golden brown. Remove tray from oven and cover with a clean cloth or paper towel. This helps to keep the scones soft.
  7. When cool to the touch, slice scones and serve plain or with a topping of butter & cheese.
