Vimla's Delicious Coconut Biscuits

Vimla Naidoo of Gauteng, South Africa, is known as an exceptional cook who constantly delights her family and friends with a delicious variety of treats.

A popular brand of margarine that is used in many of her recipes is, Rama. The recipes in this segment, just describe it as, margarine. It can be substituted with butter or the the brand of margarine you prefer.

I have tried this recipe for Coconut Biscuits/cookies, as I do like coconut. The biscuits were very delicious. Here is the recipe.


  1. 250 g./ 2 sticks margarine
  2. 1 cup sugar
  3. 1 cup cooking oil
  4. 4 cups self raising flour
  5. ½cup Maizena/cornflour
  6. 1 tsp. vanilla essence
  7. 1 ½ cups dessicated coconut
  8. ½ tsp. salt


  1. Cream margarine and sugar. Then add the cup of oil, & beat
  2. Add the rest of the ingredients to this creamed mixture
  3. Make a smooth dough
  4. Prepare trays by rubbing lightly with butter and oil. Add a sprinkle of flour, & dust of excess
  5. Pinch even sized portions of dough, roll in palm of hand, & place on tray
  6. Ensure spacing between shaped dough, to allow for expansion
  7. Bake at 180°C for 15-20 minutes
  8. Remove from oven.
  9. When cool, enjoy. Pack extras in airtight containers.

The recipe calls for self-raising flour. If you do not have the store bought self raising flour, make your own. For every cup of flour, add a 1½teaspoons of baking powder and an 1/8 tsp. of salt

Those on special diets should substitute ingredients that comply with a particular health condition.
