This is another recipe contributed by Vimala Naidoo. I tried the recipe for Romany Creams last night and I was amazed and delighted that it tasted just like the real Romany Creams. It is made without eggs, so if you have health issues or if you are observing a religious event and not eating eggs, these biscuits will be a great treat for you.
Vimala's recipe asked for 125 grams of Rama Margarine. I used 125 grams of butter.
Here is the recipe.
INGREDIENTS
Dry Ingredients
- 1 cup all purpose flour
- 2 tsp. baking powder
- 1 cup dessicated coconut. Get one that is not finely ground
- 2 tblsps.cocoa powder
- 3/4 cup sugar
- 125 grams/1 sticks/4 ounces butter or margarine
- ¼tsp salt
- 1 cup real chocolate chips
METHOD
- Sift all the dry ingredients
- Add dessicated coconut and keep aside
- Pulse sugar and butter in food processor
- Combine butter,sugar mix and flour mix. Mix thoroughly until a soft dough forms
- If you find the dough needs more softening add 1-2 teaspoons of water
- Heat oven to 180°C. or 350°F
- Prepare baking tray. Either spread a little butter/margarine on tray or use parchment paper
- Make 36 balls. Flatten them by pressing with the back of a fork and place on tray
- Allow space for dough to expand. Bake for 15 minutes
- Remove from oven and let it cool
Chocolate Filling
- Boil water in pot
- Place chocolate chips in a dish. Now place this dish into the pot while it continues to boil
- In 5 minutes mix the choc. chips and stir until the chips melt
- Remove from heat and continue to mix until you get a nice smooth consistency
- I used a glass Pyrex bowl that withstands heat
METHOD
- When biscuits/cookies are cool, apply chocolate to cookies
- use up all the melted chocolate, this amount of chocolate produces a really delicious biscuit
- Sandwich biscuits. Let the chocolate set until it feels firm. Then serve and expect lots of compliments
